Smaller striped bass have tender flesh that is mild, moist and slightly sweet, with a medium-firm, flaky texture. With a striking striped pattern, grill or roast whole with lemon, olive oil and herbs. Once cooked, the meat flakes easily, making it perfect for stuffing into tortillas for taco night.
